The inaugural Down
On Main Street
festival was a
great success!



What fun was had at the pie contest held last Saturday at the Down on Main Street festival! With a total of 16 pie entries our esteemed judges, Bud Craft, Joan Hoar, Greg Kocsak, Gary Percefull and Jeff Stark were truly challenged to select winners in the four categories of berry, cream, fruit and nut. Winners in the berry category were Sandi Dittmann, first place with a delicious strawberry/rhubarb combination, and Anna F. Brown, second place with a blackberry pie. In the cream category, Saundra Ford won first place with a Wedding Cake Pie and Mayor Kathy Taylor took second place with a chocolate cream pie. Gail Ball won first place in the fruit category with an apple pie entitled “The Yankee Apple in Red Fork’s Court” and Carol Keeley took second place with her apple pie. First place winner in the nut category was Eva Oliver with a southern pecan pie. Dena Engle took second place with her pecan pie. Saundra Ford’s Wedding Cake Pie took “Best of Show.” All winners will receive ribbons and cash prizes courtesy of RedFork Main Street and Tulsa County News.

Wedding Cake Pie Crust: Crush 25 vanilla wafers in a bowl, add 1/4 cup butter and press firmly into a pie tin. Store in freezer. Chiffon cake topper: Sift one cup flour with one tablespoon baking powder and a dash of salt, set aside. Whip one cup sugar with 1/4 cup butter and 1/4 cup shortening until light. Add a dash of vanilla and one cup whole milk, whip two minutes. Slowly add flour mixture into sugar mixture until smooth. Fold in five stiffly whipped egg whites. Bake at 375 degrees in a pre-greased and floured nine-inch cake pan for approximately 20 minutes. Set aside to cool. Cheesecake filling: Beat three eggs in a small bowl, set aside. Mix 1/4 cup cornstarch with one cup of sugar in medium sauce pan. Add one cup of milk and stir on medium high until thick and bubbling. Remove from heat and put a large spoonful of filling into beaten eggs, stir. Add egg mixture to filling, return to heat, until mixture bubbles again. Add one eight-ounce package of cream cheese, stir until smooth for approximately one minute. Pour immediately into prepared crust. Let cool slightly. Add vanilla wafers around the rim of pie tin. Set aside. Fresh blueberry layer: Place one pint of fresh blueberries in small sauce pan and boil with 1/2 cup of sugar until thick. Pour and spread over the cream cheese filling. Take cooled cake and slice through center, making the cake less then an inch high, place the top of cake on blueberry layer. Refrigerate. Buttercream frosting: Whip one tablespoon butter with one tablespoon milk and one tablespoon vanilla. Add one cup powdered sugar to whipped mixture. Continue whipping to form a light frosting. Layer a thin coat of frosting over cake topper.

A Red Fork tradition began on America’s Main
Street last Saturday, as hundreds of people
gathered for Southwest Tulsa’s new “signature
event.”
Down on Main Street … a RedFork Tradition was
organized by RedFork Main Street, Inc. And
supported by dozens of local businesses and
organizations. Organizers labeled the festival a
success and estimated more than 700 people
attended the four-hour event on Southwest
Boulevard near West 41st Street.
“More than anything, it was a celebration of what
RedFork Main Street has done in two years, and
a chance to reach people who hadn’t heard of the
project,” said Katy Davis, RedFork Main Street
executive director.
The festival was staged in front of Ollie’s Station
Restaurant, closing a short stretch of Southwest
Boulevard – which also is designated Historic
Route 66. Traffic was rerouted around the festival.
The event included a pie-baking contest, Global
Gardens Kid Zone, OSU mobile health clinic, and
dozens of exhibitors and vendors. Ollie’s was the
event’s food vendor, offering a Blue Plate Special
chicken-fried steak dinner. Recording artists
Travis Kidd and Jay Faulkner provided a musical
backdrop from a stage in the center of America’s
Main Street.
Working the crowd were several political
candidates and their supporters. Mayor Kathy
Taylor and District 2 Councilor Rick Westcott
both mingled with the festival crowd, along with
entering the pie contest.
The pie judging drew 16 entries in four categories
– nut, fruit, berry and cream. Saundra Ford’s
entry, “Wedding Cake Pie”, was honored as Best
of Show.
RedFork Main Street’s Davis announced to the
crowd “You helped our community make
memories and you helped RedFork Main Street
reach another milestone.”
Afterward, she said planning for a repeat of the
festival next year would begin soon. Persons
